Ravioli with herb oil – World’s Easiest

 

Frozen Ravioli

Sometimes it’s hard to get motivated to cook, especially after a long day of work when there is nothing in the house to cook. I’ve found a really quick, satisfying dinner that I tend to fallback on when I find myself in such a situation.

Honestly, I almost feel guilty about posting this as a recipe. I, mean, it barely even counts as cooking, but it is easy. Really, really easy. It consists of throwing some herbs in hot oil and pouring it over some high quality stuffed pasta. Simple, but really tasty. I recommend a really flavorful, hearty filled pasta. I usually go with sun dried tomato or mushroom, but you can use any that you like. You can use regular pasta if you don’t like filled, but you’ll be missing out on a lot of flavor.

I also like to add broccoli to get some vegetables in there. You can leave it out if you consider yourself a strict carnivore. If you don’t like spice, leave out the red pepper flakes. If you don’t like a lot of garlic, use one clove instead of two. I think you get the picture, this is a real loose recipe. Make it yours.

Ravioli with Herb Oil

Ingredients:

  • 1 or 2 packages of your favorite ravioli or tortellini
  • 1 head of broccoli
  • 1 cup of extra virgin olive oil
  • 2 cloves of garlic, minced
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste

Directions:

  • Cook the ravioli or tortellini per the package instructions.
  • Chop the broccoli into bite sized pieces.
  • Add the broccoli to the boiling pasta when there are 2-3 minutes left in their cooking time.
  • While the pasta cooks, add oil to a small saucepan over low-medium heat.
  • Add the garlic, basil, oregano, and red pepper flakes to the oil.
  • Drain pasta and broccoli when they are done cooking, and add herb oil over pasta.
  • Add the grated parmesan, salt and pepper to taste, and toss well
